That defines the new and revamped Out of the Blue, now an All Day Bistro co-owned and helmed by Chef Conrad D'souza.
"It's bright and fresh" says, Chef Conrad a sought-after name in the F&B industry. A stalwart best known for his eclectic desserts, been whipping up exquisite delicacies since 17 years almost.
"We have focused on keeping it light, simple and soulful" says Chef. The interiors have been completely re-done,blending in sync with the new version. "The outside Al-fresco has a more relaxed vibe with statement pieces like mirrors from Good Ole Bombay, patio furniture and exotic plants" adds Chef.
Whilst the interiors are more warm in terms of lighting, giving away a more Mediterranean art-deco vibe with a lot of blue and suede.
Out of the Blue's renaissance focuses mainly on modern European and Mediterranean cuisine with hints from Asia and India. The man behind the kitchen, Chef Xavier Fernandes explains, "Our food is simple,honest and recognizable" Is it simple gourmet? We ask!
"For example, I am doing a Duck meat balls in Teriyaki sauce with Fettucine, Lamb Shanks get the addition of a pistachio and green puree and I am also doing a mayo with chutney because customers prefer the slight Indian spicy touch". Vegetarians fret not, Bravia Potatoes and the Bianco pizza come highly recommended.
"Our bar is classic" boasts Chef Conrad! Valentain Barboza, the main man behind the bar has compared it to a vintage bar in London serving classic cocktails from the prohibition era. Valentine, among the top 26 Bar-masters of the world has used a host of self-produced bitters for this venture in particular. "All our produce is fresh and made in-house, no syrups or added color, we use organic material like stevia and plant color" "Pisco sours, Petruchio and the Singapore sling are highly recommended" adds Bar-Master Valentain.
Chef Conrad,the patissier remarquable has created his classic Chocolate Fondant & Baked Philly Cheesecake for this one in particular.
Out of the Blue's fresh version is more bistro than fine-dine. It's fun, relaxed and comforting also carrying forward the same promise it was built on.
